README explains how to include files.

Removed modletters.compose and emoji.compose from repo, since they're
generated by make.
SALTILLO was already in dotXCompose; removed from modletters and added
lowercase to dotXCompose.
Added GREEK QUESTION MARK, because I'm a horrible person.
